Journalist Mehmet Yaşin who signed up to the successful programmes named “The flavor stops,” in Turkish CNNTURK TV, subjected Ahmet Maranki, who is well-known scientist, to his column named “Relish” which takes place in the Sunday supplement of Hurriyet newspaper.
Mehmet Yaşin who realizes pleasant conversations with famous people on food and drinkings at every weekend, realised a successful interview concerning with the importance of nutrition with Ahmet Maranki, who is specialist of many issues from hair loss up to cosmic energy.
Ahmet Maranki, who says that he had never had health problems except for burning sensation in stomach during the years of university, connects this to healthy life programme and starts to pleasant interview with Mehmet Yasin as follow:
Mehmet Yaşin: Before meeting the cosmic energy, how were you used to feeding in your childhood?
Ahmet Maranki: My childhood passed in Camlica Village of Kastamonu-Inebolu where was very lovely. It was a village where had been among the pines and where it was available a sea in front of it. We were feeding with genuine milk, butter, chicken because of that it was dealt with farming and agriculture. Namely, my childhood passed by feeding with very natural foods. When we had a problem in our intestines, we were not used to taking antibiotics, instead of this we were used to drinking soup which were made from ‘tarhana’ with cornelian cherry (a dried food stuff made chiefly of curds and flour, used for making soup). We ate strawberry of mountains, hawthorn, wild pear, we had possibility to eat various kind of natural foods in the forest. Namely, i came to Istanbul by having a solid foundation in my health.
Mehmet Yaşin: Until what ages, have you eaten your mother’s meals?
Ahmet Maranki: I had been alongside with my mother for a long time both in the period of high school and university. Generally, we were used to eating at home. As my father was a worker and my mum was a housewife, it was difficult for us to eat out. My mother was used to cooking with the foodstuffs which were brought to us from the village. We were used to going to the village every summer, while returning to the city we were used to bringing our pickles, noodles, filo pastry and cheese. I met white bread in the village in 61’s. Everybody deserved a slice of bread. I ate white bread during 1 year. Now, i dont eat white bread. I prefer to eat black bread, i always eat bread made from rye in one day, i eat the one made from oat or corn in another day.
Mehmet Yaşin: What kind of things remained in your mind from Inebolu kitchen?
Ahmet Maranki: The food which i liked at most was tarhana with cornelian cherry, it was very healthful. Also, we were used to making tarhana with yoghurt, i also liked it very much. The branch of buy herb(cemen) was added into tarhana with cornelian cherry, the herb of cemen had got a capability to kill the microbes suddenly coming from outside. Of course, harmful foods were available among the foods which we ate.
For example, our another meal was available named ‘ eared pasta’ (haluska), it is bigger than manti (pasty). It is turned the dough in the form of 4 corners, it is added stuffing with parsley which is made from ground beef, it is boiled in hot water. We were used to eating this as full of dishes. If it was not available meat, it was used to making by adding potato or vegetable in it. We got fat by eating these foods. But, it is easy to burn these calories in the village. Because you work in the farm until evening and you sweat.
When i went to Caucasia for the task of state, one day Chechens invited us to the dinner. They presented us their national meal named Haluska. I looked at and reviewed the boiling cooker, it was containing 4 storey pots, at the very bottom side of the cooker the water was boiling. The steam which spread around from the cooker was passing through the other pots whose bottom sides were as perforated. Namely, the meal was cooked in the steam. As it was cooked in the steam, i ate 4 dishes and i did not feel disturbance or discomfort. The kitchen of Kastamonu is very rich, my mum was used to making hodge podge very well.

THE ROPES OF CILBIR MEAL
Mehmet Yaşin: Do you also cook?
Ahmet Maranki: I cook Cilbir very well. After boiling the water, i break the eggs one to one, i should emphasize that the rope of this is to add some oil in the water, so the eggs remain at their places. After the eggs were boiled, i filter the water, i take them and put in the service dish. First, i pour yoghurt with garlic into them, after making the sausage with with butter and hot pepper, i also pour this sausage into them. Nutritional value is very high, and it is healthy. To me, Cooking is an art, cooking and eating delicious meals are an art.
Mehmet Yaşin: What are two meals which like hate at most?
Ahmet Maranki: I dont hate any meal. I have got 145 recipes. I make all of them with love and desire. But, i hate Doner which is made from chicken and meat. Doner (pressed lamb roasted on a large vertical spit) was used to be the meal which i liked at most, but it is not in these conditions. "Doner" is famous in Inebolu, it is made from the meat of lamb. Its thickness does not exceed 35-40 cm. The oak woods are made embers, they are replaced in the spit, it does not certainly be closed up to the meat. It should be 20 cm gap between the meat and fire. I was brought up with the Doner which was made in this way, so i can not eat every Doner outside.
Mehmet Yaşin: What meal do you like at most from the ones which your wife make?
Ahmet Maranki: As my wife is from Caucasia, she cooks Haluska, she makes it by weaving like an art. The dough is turned (it should be whole wheat bread), we prepare its stuffing, it contains parsley, dill, onion and all kind of spices. Mrs. Elmas gives the shape of crescent to the filo pastries which she stuffed, she replaces them in steam pot, we pour yoghurt with garlic into it.
Mehmet Yaşin: Do you eat out? What kind of restaurants do you prefer?
Ahmet Maranki: I do not eat everywhere, i prefer the meals which my wife makes. Also, i eat in the social facilities of Istanbul Metropolitan Municipality. Because, i serve as a consultance in for those foundations. I saw their kitchens while cooking, i checked them so i can eat there with complacency, also i take my guests there.
Apart from this, it is available fish restaurants where i have always gone since my childhood. One of these is ”Reis'in Yeri”at Cekmece. I never eat the fishes coming from the farms, i don’t advise to anybody either. When i was invited to a place, there are someones who ask me what i would prefer to eat. This is the true way. If someone invites me to the meal, he should think what i would prefer to eat.
A very important person in Usa, invited me to the dinner. That person was a Jewish, 3 days ago, he started to ask me what i would prefer to eat, that is the real way of invitation. In the places where i go, everybody looks around and be in a rush what Maranki would eat. If they made preparations by knowing what i would prefer to eat, everybody would be relax and comfort.
GARLIC TABLET FOR HEADACHE
Mehmet Yasin: You feed so healthy, don’t you ever get ill, don’t you ever have any discomfort?
Ahmet Maranki: Thank Godness, until now, i have never had a surgical operation. Once, a stone fell upon my nail, i bought anesthesia only for that. Apart from this, i did not have any discomfort. I had took drug only for my burning sensation of stomach in the university before. After the university was finished, those problems also ended.
I discovered food supports. I first use these tablets myself. For example, if i have headache and its reason is stemmed from the tension, i take a garlic tablet. In my 33 years of the task of state, it has been written only one device in my health record, it is an oxygen device only. As far as i remember, it is not any expenditure of me for the state. As my mother could not go to the doctor in the past, maybe some rheumatism drugs were written in the prescription by the doctor.
Mehmet Yaşin: Do you sometimes break the rules and eat like as you wish to do? Do you elude?
Ahmet Maranki: I sometimes elude for fish or meat. Assuredly, with the stipulation of being goat meat or lamb. I can never say no to Doner in the village. If i am to eat meat in a celebration, i take 4 pieces of herbal tablets of our company production, which prevent the bacterium and viruses, then i start to eat. My elusion is in this way.
10 ADVICES FOR HEALTH
* One should drink hot water which is added honey and lemon every morning.
* One should not cook his meals by stirring them. One should eat protein, carbonhydrate and sugar separately without not mixing them each other. Yavuz Sultan Selim wasd used to eating only one kind of meal everyday. One day is meat, another day is cabbage or dessert.
* One should not eat the meat of the animals with hormones and farm fishes.
* One should not cook meals so much.
* Ones should not miss the herbal teas in their lives, mainly green tea. Meanwhile, one should certainly eat 3-5 pieces of hazelnuts, walnuts, almonds, dry grapes, dates every day.
* One should remove white bread from the table and drink black tea less.
* One should stay away from magnetic waves.
* The houses should be in the position which can see the sun.
* One should breathe in deeply 4 times in a minute.
* One should make spiritual therapy, this can be Yoga or Reiki due to the opinion of some people. However, i rename them as prayer, salat, fasting, looking and seeing positively, charity, benevolence. The rest of the life is lived in quality all together with these things.
WE INTRODUCE THE BODY CLEANSING AT THE RIGHT TIME TO THE FULL MOON
Mehmet Yaşin: How should one feed in order to cleanse his body?
Ahmet Maranki: We make body cleansing in spring and autumn twice a year. In order to enter the summer as a healthy person, you should make body cleansing in spring certainly. We eat during summer, it is necessary to enter the winter as a happy man by making body cleansing in the months of september, october, november of autumn for the winter. This cleansing is made due to the attraction power of the moon.
Namely, i mention the months such as Recep, Saban, Ramazan, Muharrem. Now, we have been in Recep month. The 14 th day is the period when the size of the full moon is the biggest. Namely, it is the period which the moon attracts our body most effectively. We start to detox before 7 days of this. During these 7 days, you squeeze the juices of the vegetables and fruits such as beetroot, spinach, apple, carrot, cabbage, cress and radish in the mornings, add also 1 spoonful olive oil in it, drink them as 2 glasses of juices two times in a row.
In the noon, you should eat a meal which is made with seasonal vegetables and a salad to the next to them. In the breaks, you drink green tea and fruit teas. In the evening, you eat steamed vegetables and a few fruits to the next to them. Also, we advise you to apply enema in the control of the doctor. During 7 days, you apply this and cleanse your body. In the last day, we advise them to drink olive oil mixed with lemon juice. If you cleanse your body in the months of March, april, may, september, october, november, i think so that you would live the rest of your life as a person who is more healthy.
Mehmet Yaşin: What do you advise for the parents who wish their children to be more smart?
Ahmet Maranki: he children whose the bodies of parents are diseased, also are born with the diseases. The mother who makes the body cleansing which i mention, does not never transmit her own diseases to her child. I advise the mothers to make body cleansing before marriage and having a child. The ones who can not have a child or wish to give births to healthy children must certainly make body cleansing. They should eat the vegetables and fruits in their own seasons.
RECIPE FOR THE "CULLAMA" OF FRESH BEAN
Cullama of fresh beans is very healthful. After washing the fresh beans, boil them in hot water. On the other hand, prepare a sausage which consists of onion, tomato or ground beef. Put the boiled fresh beans on a tray and pour this sausage into this. I also eat seasonal salad to the next to it. I dont eat dessert after the meal certainly. I drink green tea 1 hour later. If i wish, i can eat dessert of fig, quince or pumpkin due to their seasons.
ROASTING OF HODGE PODGE FOR WINTER AND SUMMER
AMy mother was used to making the roasting of hodge podge which consisted of eggplant, tomato, zucchini, fresh bean and pepper. What kind of vegetables you find in summer, slice them in small parts, add onion and lightly roast them. Go on roasting them for a while. Later, add little water, close the cover of the cooker, if you wish you can add egg in it, in winter you can make this roasting with seasonal vegetables such as leek and celery. It would be both delicious and healthy.
MARANKI DOES NOT HAVE A LUNCH
Everything should be eaten in its own season, first i would like to highlight to this. The foods i eat, varies due to their seasons. I eat eggs in the mornings every day which come from the village. One day i eat hard- boiled egg, another day i eat egg as soft boiled. I certainly eat menemen meal which is made from village tomato. It is certainly available goat cheese, parmesan cheese and curd cheese on the table.
We collect the roots of celeries and chards. We sometimes roast them and break eggs into them. We eat our eggs with menemen consisting of chards, another day i eat them with celery and curd cheese. In addition to this, i dont neglect my honey. Mad honey of our village is famous, but i eat less. It does not exceed 1 teaspoon of honey, because it involves oleander, so it is very effective. If you ride it your hand and your face, you will see it would heal the injuries suddenly.
I drink green tea as 3 glasses. I sweeten my tea by adding honey in it. In the middle of the table, it is available plenty of greens such as parsley, cress, garden rocket, onion, lettuce. I never chop these. The materials of salad are not chopped in any place in the world except for Turkey. They are torn with hand.
I get up at 04:30 every morning. First, i drink 2 glasses of hot water. Later, i take herbal tablets and drink apple vinegar as mixed with honey. I have my breakfast 4 hours later. I never have a lunch. Maranki does not have a lunch. So i make a very strong breakfast.
I fry the bread in order that it could not lose its nutritional value. Indeed, i dont go hungry until the evening. In the breaks, i drink green tea and herbal teas, i eat some seasonal fruits. I have my dinner in the sunset. While eating foods, it is necessary not to mix the protein with carbonhydrate and dessert.
